How to Choose a Vacuum Packing Machine: The Full Guide

A vacuum packing machine removes air from a sealed pouch, creating an oxygen-free environment that slows bacteria, mold and oxidation. Here is how to match the machine to your product and throughput.

Vacuum Packing: the Cheapest Shelf-Life Insurance a Food Business Can Buy

A vacuum packing machine removes air from a sealed pouch, creating an oxygen-free environment that slows the bacteria, mold and oxidation that spoil food. For commercial food operations the effect is dramatic: vacuum-packed products typically last 3–5 times longer than conventionally packaged food, keep their color and flavor, and survive freezer storage without freezer burn. The same principle protects non-food products — medical instruments, electronics, documents — from moisture and oxidation.

SunAura’s vacuum packing line covers every scale: the compact VM300TE tabletop sealer for restaurants and retail counters, the DZ400/500/600 single-chamber series for growing food processors, and the VM400/VM500 double-chamber machines for continuous production. All product-contact surfaces are 304 stainless steel, all machines are CE certified, and the VM series uses electrical components from Schneider (Germany) and OMRON (Japan) for reliability.

Tabletop, Single Chamber or Double Chamber — Match the Machine to Your Throughput

Tabletop (VM300TE, 300 mm seal): 60–100 bags/hour, fits on a countertop. Perfect for restaurants, delis, butcher counters and small-batch producers. Cycle time 15–30 seconds per bag, sealing length 300 mm, max product roughly 300×300×70 mm.

Single chamber (DZ400/500/600): the operator loads the chamber, closes the lid, the machine vacuums and seals, then the lid opens. 50–120 bags/hour depending on model and product. DZ400 (400 mm seal, 10 m³/h pump, 80 kg) for entry volume; DZ500 (500 mm, 16 m³/h, 110 kg) as the mid-range workhorse; DZ600 (600 mm seal, 20 m³/h pump, 620×620 mm chamber, 150 kg) when you pack whole poultry, large fish or big cuts.

Double chamber (VM400/VM500): two chambers work alternately — one evacuates while the other is loaded. This removes the idle time of single-chamber machines and raises throughput by 60–80%, making double chamber the right choice above roughly 150 bags/hour or for lines feeding directly into boxing and shrink wrapping.

Matching the Machine to Your Product (the Details That Decide Quality)

Product size: bag width must fit your sealing length. The DZ600 accepts bags up to 600 mm wide; chamber depth (150 mm standard) can be customized to 200–250 mm for taller products. If your product exceeds 600 mm, we build custom large-chamber machines.

Moisture and liquid: all SunAura machines handle soups, marinades and sauces — keep headspace in the bag and use a slightly lower vacuum setting for high-liquid products so liquid is not drawn into the pump. For hot products (up to 80°C), 304 stainless chambers handle contact fine, but let steam-heavy products cool below 60°C where possible, or spec the optional water-cooled pump.

Bag materials: use embossed (channel) vacuum bags 0.08–0.15 mm thick in PA/PE or PET/PE composites for best air evacuation; flat bags work but evacuate slower. We recommend running a small batch of your real product and bags before ordering volume — send samples and we test the cycle parameters for you.

What Extends Shelf Life — and What Doesn’t

Vacuum sealing works by removing oxygen, so shelf life gains are real only when three things are right: the product starts fresh (vacuum does not revive old product), the seal is complete (a leaky seal reintroduces oxygen — our machines test seal integrity on every cycle via vacuum level verification), and cold chain is respected. Expect 3–5x longer life for meat, fish and cheese; for dry goods the gain is mainly protection from moisture and pests rather than extended life.

The limiting-vacuum function on the VM series seals immediately at maximum vacuum, preventing over-shrinkage that can crush soft products like bread and pastries.

Planning Throughput and Bag Cost

Budget roughly 60–100 bags/hour on the VM300TE, 50–120 on single-chamber models, and 150–250 on double-chamber machines when product size allows. Work backwards from your daily output: 500 packs/day over one 8-hour shift needs about 65 bags/hour — comfortably within a single-chamber DZ400. Above 1,200 packs/day, go double chamber or run two machines. Bag cost is the other planning number: request pricing on your exact bag size at quote time — we include consumption estimates in every proposal.

Maintenance That Keeps the Pump Alive

The rotary vane oil-sealed pump is the heart of every chamber machine. Check the oil level weekly; change pump oil every 500 operating hours or every 3 months under daily 8-hour use (ISO VG 46). Clean the 304 chamber with food-safe sanitizer after each shift, keep the sealing bar free of residue, and never spray water into electrical components. These four habits account for nearly all the difference between 3-year and 10-year machine life, and our manual and video support cover each step.

01

Throughput

60–100 bags/h tabletop, 50–120 single chamber, 150–250 double chamber. Above 1,200 packs/day → double chamber.

02

Product Size

Sealing length 300–600 mm must fit your bag width. Chamber depth customizable to 200–250 mm.

03

Product Type

Liquids and hot products (≤80°C) are fine with correct settings; spec the water-cooled pump for steam-heavy runs.

04

Bag Material

Embossed PA/PE or PET/PE bags 0.08–0.15 mm evacuate best. Test with your real product before volume.

05

Maintenance

Weekly oil check, change every 500h or 3 months (ISO VG 46), daily food-safe chamber cleaning.

Five Mistakes That Cost Buyers Time and Money

  • Oversizing the machine — A double-chamber machine at 500 bags/day runs idle half the shift. Match throughput, not ambition.
  • Wrong bag choice — Flat bags evacuate slowly and can trap air pockets. Use embossed PA/PE or PET/PE bags.
  • Skipping pump oil changes — The rotary vane pump dies quietly. Weekly oil check, change every 500h or 3 months.
  • Vacuuming liquids at full power — High vacuum draws liquid into the pump. Lower the vacuum setting and keep headspace.

FAQ

Frequently Asked Questions

How much longer does vacuum packing make food last?

Vacuum-packed products typically last 3–5 times longer than conventional packaging, provided the product starts fresh, the seal is complete and cold chain is maintained. It also prevents freezer burn and preserves color and flavor.

What vacuum bags should I use?

Embossed (channel) bags 0.08–0.15 mm thick in PA/PE or PET/PE composites evacuate best. Bag width must fit the sealing length (300–600 mm depending on model).

Can the machine pack liquids?

Yes — soups, sauces and marinades. Keep headspace in the bag and use a slightly lower vacuum setting so liquid is not drawn into the pump.

Can I vacuum pack hot food?

Products up to 80°C are safe for the 304 stainless chamber, but steam reduces pump performance — cool below 60°C where possible or choose the optional water-cooled pump.

Single chamber or double chamber?

Single chamber (DZ series) suits 50–120 bags/hour and large products. Double chamber (VM series) raises throughput 60–80% by alternating chambers — choose it above ~150 bags/hour or for line integration.

How often must I change the pump oil?

Check weekly; change every 500 operating hours or every 3 months under daily use (ISO VG 46 pump oil).

Can the chamber depth be customized?

Yes. DZ chamber depth is customizable (e.g. 200–250 mm) for taller products; larger formats use custom-built machines.

What is the lead time and warranty?

Standard in-stock models 7–15 days; custom configurations 20–30 days. 12-month warranty, lifetime remote support, spare parts within 48 hours.
